Chiapudding as breakfast or between meals

Chiapudding, one of many popular breakfasts I’ve been very hesitant to. Everything named pudding has always been quite scary to me, I see something jelly when I think of it and that really doesn’t make me wanna try it. But, as with many other things I ended up tasting, I was all totally wrong about it and liked it so much! Also, it really isn’t like jelly.

For me, chia pudding is as good to have for breakfast as it is to eat between the meals or even as a dessert, the only thing I do differently if I want it as dessert is that I make it a bit sweeter.

Use more seasonal fruits

The apples are starting to ripe and the cold autumn nights are soon here. What’s better than a breakfast or snack with the taste of autumn apples and cinnamon? To me it’s an unbeatable combination, especially in the colder and darker days of the year. This time I made a sweet chia pudding that makes me long for the autumn, the perfect breakfast with apple and cinnamon, a really simple but such a good combination!

I’m truly blessed to be able to just go around the block or sometimes even to the garden to pick the fruits, vegetables and herbs that I need. But even if it isn’t possible for you to do the same i highly recommend you to use the food that it’s season for. They often taste way better and can be grown more naturally and local.

This chia pudding is really easy to make and the classic combination of apple and cinnamon makes it just as good to have for breakfast as it is for dessert.
Course: Breakfast
Servings: 2
Ingredients
  • 3 medium to large apples
  • 200 ml water
  • 200 ml soy cream I used one from Alpro*
  • 200 ml oat milk
  • 4 tbs chia seeds
  • 1/2 tsp cinnamon
  • 1-2 tbs agave syrup
Instructions
  1. Peel the apples and cut them in to smaller pieces.
  2. Add water, the apples (save one third of the apples for topping), half of the cinnamon and the agave syrup to a pot and simmer until the apples are soft and most of the water is gone. Taste and add more syrup if needed. Put in the frige to cool.
  3. Whisk the chia seeds, soy cream, oat milk and the rest of the cinnamon in a bowl until well combined. Set aside for 20-30 minutes to thicken.
  4. Add 1/4 of the apple cream to the chia pudding.
  5. Pour the rest of the apple cream in the bottom of two glasses, add half of the chia pudding in each glass. Top with the rest of the apples and sprinkle with cinnamon.
