Put all of the ingredients except the raspberries in a bowl and mix.
Add the mashed, sweetened raspberries and the oats mixture in layers in a glass or a bowl and cover overnight. I prefer to eat my overnight oats room temperatured, but if you want the, cold just put them in the fridge over night.
In the morning, top with raspberries, banana and some shredded coconut.
Substitution Note: Vanilla sugar may be substituted with vanilla extract.
