Apple, cinnamon chia pudding
This chia pudding is really easy to make and the classic combination of apple and cinnamon makes it just as good to have for breakfast as it is for dessert.

- 3 medium to large apples
- 200 ml water
- 200 ml soy cream I used one from Alpro*
- 200 ml oat milk
- 4 tbs chia seeds
- 1/2 tsp cinnamon
- 1-2 tbs agave syrup
Peel the apples and cut them in to smaller pieces.
Add water, the apples (save one third of the apples for topping), half of the cinnamon and the agave syrup to a pot and simmer until the apples are soft and most of the water is gone. Taste and add more syrup if needed. Put in the frige to cool.
Whisk the chia seeds, soy cream, oat milk and the rest of the cinnamon in a bowl until well combined. Set aside for 20-30 minutes to thicken.
Add 1/4 of the apple cream to the chia pudding.
Pour the rest of the apple cream in the bottom of two glasses, add half of the chia pudding in each glass. Top with the rest of the apples and sprinkle with cinnamon.
