Vegan honey (dandelion dyrup)

A vegan alternative to honey made on the dandelion flower. Has a distinct taste of honey and if you want, a freshness of lemon.

Ingredients

  • 100 g dandelion petals the yellow leaves from the flowers
  • 600 ml water
  • 1 lemon lemon zest + lemon juice (optional
  • 1 liter caster sugar

Instructions

  • Remove the yellow leaves from the flowers until you have about 100g of petals.
  • Rinse the petals in cold water and remove any small insects.
  • Put the petals and lemon zest in a pot and add 6 dl of water.
  • Bring to a boil and simmer on low heat for about 20 minutes.
  • Allow to cool and then strain the leaves and pour in the liquid in a clean pot.
  • Add in the sugar and if you want to add a bit mote taste of lemon to the honey, the juice from 0.5-1 lemon depending on how much acidity you want. If you just want a classic, sweet honey, you can skip the lemon juice.
  • Bring to a boil and let it simmer for about 60 minutes, until the honey starts to thicken. Keep in mind that it gets quite a bit thicker / harder when it cools, so it should be quite runny.
  • Pour into clean, preferably warm, jars.
  • Let cool slightly before you closes the lid.
  • Store unopened jar dark and cool, opened jar is stored in the refrigerator.
