Vegan saffron buns

This is a really classic recipe, but of course completely vegan. These vegan buns are some of the best I have ever tasted! They have a rich saffron flavor, are fluffy and moist, and are perfect to bake for lucia or Christmas.

To bake is one of the things I look forward to the most when Christmas is a few weeks away. I love experimenting with all flavors of Christmas and bake everything from classic pastries with a twist to Christmas candy and the traditional flavors like these saffron buns.

The perfect thing to bake for Christmas

Baking should be easy and fun! I usually try to focus on pastries that everyone can make and to use ingredients that are found in every kitchen. The best pastries are those that you actually make.

If you have children, these saffron buns are perfect to make together with the little ones. It’s a smooth dough, it doesn’t stick everywhere and is a bit more fun to work with with its yellow color. So why not have a nice day of baking with the kids before Christmas?

Vegan saffron buns

Tasty, moist, classic saffron buns. Easy to make and perfect for the Christmas.

Ingredients
  

  • 50 g of fresh yeast for sweet dough
  • 175 g of vegan butter
  • 1 g saffron
  • 200 ml granulated sugar
  • 500 ml vegan milk (I used oat milk)
  • 0.5 tsp salt
  • 1500 ml  wheat flour
  • raisin (optional)

Instructions
 

  • Melt the butter in a saucepan.
  • Grind saffron with some sugar and mix in the melted butter.
  • Add the milk and heat to 100°F.
  • Crumb the yeast into a bowl, pour some of the milk mixture and mix until the yeast has dissolved.
  • Pour the rest of the milk, sugar and salt and mix.
  • Mix some flour at a time until almost all flour is mixed. Save a little to the backup.
  • Kned for about 5 minutes by machine or 10 minutes by hand. You should be able to touch the dough without it sticking to your fingers..
  • Let the dough ferment for 30-45 minutes under a baking cloth.
  • Knead the dough on a floured workbench. Shape the dough into buns in desired shape and size. The buns will be almost twice as big when they’re baked so don’t make them too big.
  • Ferment for 30-34 minutes under the backing cloth. Preheat the oven to 440°F.
  • Brush the buns with melted butter, if you wish, put raisins in the buns and bake in the middle of the oven for about 8 minutes.
