Mocha squares – a swedish classic
Mocha squares, or “love treats”, are pretty popular in Sweden and you can find them in almost every Swedish café. For me it’s always been one of my favorit treats and I’ve been baking them for as long as I can remember. These sweet squares are really delicious with the combination of a soft chocolate bottom with a cover of chocolate glaze with a hint of coffee and topped with coconut flakes. It’s an absolute taste sensation and I honestly haven’t met anyone who doesn’t like them.
Apart from being absolutely delicious they are also so easy to make, which makes them the perfect treat for days when you’re having someone over and want to bake something but don’t have a lot to time to spend in the kitchen. Even though they are so easy to make they feel pretty luxurious and not at all as simple as a plain muffin or something like that.
- 500 ml wheat flour
- 350 ml granulated sugar
- 100 ml cocoa
- 2 tsp baking powder
- 125 ml tasteless oil I used rapeseed oil
- 1,5 tbs light vinegar I usually use either coconut vinegar or apple cider vinegar
- 350 ml oat milk
- 0,5 tsp salt
- 75 g plant based butter
- 300 ml icing sugar
- 1,5 tbs strong coffee
- 2 tbs cocoa
- 200 ml coconut flakes
- Preheat the oven to 350°F (175°C)
- Mix all of the dry ingredients to the base in a bowl.
- Add the oil and mix.
- Add the vinegar and the oat milk and mix with an electric mixer to a smooth batter.
- Line a baking tin, approximately 8x12 inches (20x30 cm), with baking paper.
- Pour the batter into the tin and bake for 20 minutes. Let the base cool down.
- Meanwhile, melt the plant based butter in a pot. Add the rest of the ingredients to the glaze and stir until you have a smooth batter.
- Pour the glaze over the cake and spread even.
- Top with coconut flakes and cut into smaller squares.
