Vegan homemade bread

Isn’t it wonderful it to be able to eat freshly baked homemade bread? At least that makes me a little extra happy in the morning. This is an easy vegan loaf that is baked relatively quickly.

It was way too long since I baked bread so this weekend when I had some time over I finally got back to it. We don’t eat very much bread at home, but once we do, it’s so much more appreciated with a homemade loaf than a bought one.

Baking should be easy 

At least that’s what I think. I love to bake.  I love to experiment with new recipes and combinations. I love to challenge myself.  But, when I know exactly what I want and just wanna do it, no exploration, then I want it to be easy and fast.

I want to be able to go to the kitchen, throw together all the ingredients, put it in the oven and then be done. And that’s exactly what it’s like with this bread. Of course it has to be fermented for a while, but the time you have to spend to actually do something is minimal.

Easy, juicy vegan bread with sunflower seeds and flaxseed.
Course: bread
Cuisine: Vegan
  • 200 ml rye flour
  • 200 ml sunflower seeds
  • 100 ml wheat bran
  • 100 ml whole flaxseed
  • 1.5 tsp salt
  • 500 ml boiling water
  • 2.5 tsp (about 8dry yeast
  • 200 ml lukewarm water
  • 900-1000 ml wheat flour
  1. Pour rye flour, flaxseeds, wheat bran, sunflower seeds and salt into a bowl. Add 5 cups of boiling water and mix. Cover and let it rest for about 1 hour.
  2. Mix the yeast in the lukewarm water and stir until the yeast is completely dissolved. Pour in the bowl with rye flour etc.
  3. Add the flour and mix well. Work the dough for about 10 minutes.
  4. Cover the bowl and let the dough ferment for 30 minutes.
  5. Pour out the dough on a floured baking table and divide it into two pieces. Shape into two loaves.
  6. Cut the desired pattern into the loaves Andorra you want any topping brush with plantbased cream and top with nuts or seeds.
  7. Put the oven at 440°F (225°C).
  8. Bake in the middle of the oven for 15 minutes, then lower the heat to 350°F (175°C) and bake for another 25 minutes.
