Vegan overnight oats
Making a vegan overnight oats is so easy! Today (or rather yesterday) I made a slightly sweeter overnight oats than the ones I usually do, this time flavored with raspberries and vanilla, topped with fresh raspberries, banana and coconut flakes. Such a great combination!
Raspberries along with oatmeal seem to be one of those thing that you either love or hate, for me it is very important that the raspberries are sweet enough if I’m going to like them with oats.

My favorite topping
Let’s face it, banana topping on overnight oats is soooo good! It doesn’t matters what I flavor it with or what other toppings I use, banana is almost always one of the toppings! The banana balances and complements all the other flavors so good.

Overnight oats
Ingredients
- 100 ml oats
- 150 ml almond milk
- 0,5 tbs chia seeds
- 0,5 tbs agave syrup
- 0,5 tbs shredded coconut
- 100 ml mashed, sweetened rapberries
- 0.5 tsp vanilla sugar ((or 0.25 tsp vanilla extract))
Topping:
- Banana
- Raspberries
- Shredded coconut
Instructions
- Put all of the ingredients except the raspberries in a bowl and mix.
- Add the mashed, sweetened raspberries and the oats mixture in layers in a glass or a bowl and cover overnight. I prefer to eat my overnight oats room temperatured, but if you want the, cold just put them in the fridge over night.
- In the morning, top with raspberries, banana and some shredded coconut.
- Enjoy!
